What is the sensor located on the top of the intake water jacket next to the thermostat on a 1995 GMC 350 engine?

I have a problem with the sensor located on the top if the intake water jacket next to the thermostat on my 1995 GMC 350 engine. I have changed the thermostat. The engine temperature warms up and drops back down. Why? and what is that sensor for?

in my repair manual its showing thay sensor as a coolant temperature sensor..if it goes bad it'll give you erratic readings on the gauge inside.your temp is supposed to go up about half way and then drop and level off at sbout a quarter of the up if you have #'s its supposed to be inbetween 170 and 220.if you changed the thermostat and the temp is super low "below 170" then you may have sensor issues.from what i see that sensor also relays to the computer the engine temp. which means its a information sensor to tell the computer if the engine is cold "high idle" or warm "low idle" or normal running temp.my manual don't give me specifications on the resistance the sensor is supposed to have,if it did you could chech the sensor with a ohm meter.then again it could be your thermostat is a cool running thermostat which means it opens before "195-220" its rated temp.you can get "hotter thermostats" for your vehicle and have no adverse effects,but you want to make sure your temp. senso isn't faulty first.i hope this gives you some insite ...
